Adobo is a popular dish and and at the same time a cooking process in Philippine cuisine that involves meat or seafood marinated in a sauce of vinegar and garlic, browned in oil, and simmered in the marinade. This version however presents that fish like Pantat or Hito (Catfish in english) can also be cooked Adobo inspired.
