Recipe: Pork Sinigang

Ingredients:
1/2 k pork, cut into serving pieces
2 large tomatoes
4 pieces green tamarind fruit
1 medium sized radish
2 medium sized gabi root
5 mustasa leaves (buro)
6 kalabasa tops
1 qt. water
1/4 c patis
1/8 tsp white pepper

Procedure:
1. Place pork, tomatoes and green tamarind fruit in a pan. Add the water and let simmer until meat is tender.
2. Press and strain the tamarind fruit with a little of the broth
3. Add the vegetables and seasonings.
4. When done, serve with broth and patis.
5. Serve hot for 6.

Recipe: Pan Seared Butter-Garlic Tanigue

This is my first time to cook Pan Seared Butter-Garlic Tanigue recipe inspired from another recipe website. My dad bought home half a kilo of Tanigue and he (as always) asked me to cook. Not wanting to prepare another same old boring fried tanigue, I scouted the net for some refreshing tanigue recipe and I simply followed the instructions.
Pan Seared Butter Garlic Tanigue
Ingredients:
olive oil
tanigue
butter
pepper
salt
garlic, minced
calamansi
liquid seasoning

Procedure:
1. Season the fish with salt, pepper, calamansi and liquid seasoning. Set aside.
2. Heat olive oil in a pan.
3. Toast the minced garlic until slightly brown.
4. Pan sear the tanigue about 3-5 minutes on each side depending on your preferred done-ness and thickness of the fish. Cover to trap the heat.
5. Add butter
6. Place the tanigue in a serving plate and pour the remaining garlic-butter-oil mixture on top.

Blue cheese and mozarella cheese topped with juicy buffalo chicken with a tower of crunchy onion rings - the latest offering of Greenwich, the Buffalo Chicken and Onion Rings Pizza!

After a mind blowing 2 day seminar I attended in Makati, mom and my 2 siblings met at Greenwich for some pizza pasta crave. And I opted to try one of their Top That Pizzas, their TV ad enticed me to try have that pizza experience.

We ordered the Family size thick crust Buffalo Chicken and Onion Rings Pizza. My mom though it was spicy, while I thought it doesn't offer that much flavor. While the serving was good, I wasn't really happy with it. It's one pizza I would not order again, uhm sorry Greenwich. Your lasagna is good though, it has always been my favorite!

Recipe: Meatballs with Tomato Sauce

Ingredients:

1 k ground pork
1 c onion, chopped
1/4 c green onion, chopped
1 tbsp. salt
1/8 tsp white pepper
1 raw egg
1/4 c oil
1 tbsp. garlic, macerated
1 onion, chopped
1 (8 oz. can) tomato sauce
1/2 c water
1 tbsp. patis
1 tabasco sauce - few drops


Procedure:
1. Combine pork, onions, salt, pepper and eggs.
2. Shape into 2" balls and roll in flour.
3. Fry in hot fat until brown.
4. Saute garlic in remaining fat; then onions.
5. Add tomato sauce, water and seasoning.
6. Add meatballs and let simmer for 10 minutes.
7. Serve hot for 6.

Recipe: Carrot Pipino Juice

My parents are soooo into healthy stuff nowadays - from cooking healthy but sometimes bland food (oh, poor kids) to taking some food supplements, to listening radio health programs and I could go on and on. I guess it just proves the emerging health and wellness industry. My parents have been buying a lot of stuff they hope would make them feel better...and they do!

This particular recipe has in fact replaced juice packs and soft drinks we as family once loved to have every now and then. Mom and I had this particular juice when we visited our relatives in Lake Sebu. They have been serving this to some of their guests and I must say, I love this juice!

A blend of freshness: carrot - pipino

It's very easy to make. Just blend one carrot, one pipino (cucumber), 2 kalamansi and you're done. For added sweetness you can put on a tbsp of honey. :)

Recipe: Fried Bananas

Here's an easy to do merienda treat popular to Filipinos plus it's healthy too! This recipe is so damn easy, it wouldn't take 10 minutes to prepare and all you need frankly is a  cluster of bananas called saba. Peel and cut them in half and simply fry these guys! This easy to de recipe is ideal for health conscious buffs craving for a delicious healthy snack food :)

Recipe: Lumpia Shanghai

Ingredients:

1/4 k ground pork
1/4 k shrimps, shelled and chopped
1/2 c chopped onion
1/2 c chopped water chestnut or singkamas
2 eggs
1/4 c green onion leaves, sliced fine
1/8 tsp white pepper
1 tbsp. patis
25 lumpia wrappers

Procedure:
1. Mix all ingredients except wrapper in a bowl.
2. Divide wrapper into half
3. Place a tablespoon of the meat mixture into the halved wrapper and wrap with both ends sealed.
4. Heat enough oil in a frying pan and deep fat fry the lumpia.
5. Serve with sweet and sour sauce.

Recipe: Homemade Peanut Butter

When we were younger, my brothers and I would drool over a bottle of peanut butter bought from the supermarket. Today, we appreciate peanut butters that are home made. I have one particular favorite, the peanut butter that is made by ate Nene in South Cotabato. My aunts would bring these pasalubongs for us in Manila and they are just wonderful to eat.




 
Ingredients:
1 1/2 pound roasted peanuts -- unsalted in the shell
Salt to taste
2 1/2 tablespoons cooking oil or margarine

Directions:

1. Shell the peanuts.
2. Grind in food processor until almost smooth (you can leave some lumps if you want crunchy peanut butter).
3. Add oil, enough so mixture is spreadable. Add salt. Blend just to mix.

Recipe: Sweet Honey Chicken Adobo

I have posted here already the recipe for making the Sweet Honey Pork Adobo. This time I'll be making Sweet Honey Chicken Adobo which is frankly just very much the same as that of the former recipe. From the ingredients down to the cooking part. For this post, I would like to include some tips and more pictures in making this recipe :)



In cleaning the chicken, make sure to remove that chicken fats.

And these my friends are the secret ingredients in making this a sweet Pinoy meal. I was actually inspired first by the honey I bought for Php140 during my recent travel to Socksargen. My dad requested for that pure wild honey (Non Processed) from the mountains of Lake Sebu and T'boli, South Cotabato. Don't miss this honey once you get to General Santos Airport. You can buy this at 2nd floor near the stairs. Few months after, I saw the honey sitting in the kitchen cabinet and an idea popped up! So instead of brown sugar, I used the Lake Sebu honey as an alternative for my Adobo.

Of course you can use other brands of honey out there. I bought the Palawan honey in Robinsons supermarket, much cheaper compared to that of Lake Sebu honey.

After marinating simply add a cup of water and cook the chicken for about 30-40 minutes in low to medium heat.

Recipe: Embotido

Ingredients:
1 k ground pork
1/2 frankfurters, chopped fine
1 chorizo de Bilbao, chopped fine
1/2 c mixed relish or chopped sweet pickles
1 onion, chopped
2 tsp. pepper
2 eggs raw
1 c bread crumbs
1 c sweet peas
1/4 chopped red pepper
Sinsal or wax paper

Procedure:

1. Combine all ingredients and shape into a loaf.
2. Wrap with sinsal or wax paper, wrap the roll in cheese cloth tying both ends.
3. Steam for one hour.
4. When done, remove cheese cloth and brown meat in hot fat.
5. To serve, slice and pour tomato catsup on top.
6. Serve hot for 8.

Pinoy Tasty

Pinoy Tasty, the country's first nationally distributed generic bread loaf hits store shelves this first week of October. My dad bought home 2 loaves of it for us to try. Selling at P36 per 450 gram loaf, this bread is a sure help for those who want to save big on bread.

My take? It's not as soft and tasty as Gardenia, a must have in our grocery list. Probably because Pinoy Tasty is not enriched with milk, eggs, margarine, cream and butter, and uses the cheaper non-vat washed sugar. But for the budget concious out there, Pinoy Tasty can help you save more.

Dine in: Red Ribbon Cakes and Palabok Meal

Mom and I has always been a Red Ribbon fan. We love their cakes because of their richness and moisture which I really prefer compared to Goldilocks. When the cravings sets in, I know very much what to order.

Way back 2004 when I first ordered their Palabok plus cake meal, they just have this simple presentation, very plain. We would always order that because, oh well, it's budget friendly :) Then yesterday, mom and I were actually amazed to see how it is now presented! These cakes rock!

Most of the time, I order their coffee crunch cake but it's not one of their "cake slices for the day", so I chose another favorite, sansrival and mocha caramel cake for mom. For Php120, you can have a plate of palabok, your choice of cake (you can choose from 3-4 cakes depending on availability) and a drink.

Recipe: Sweet Honey Pork Adobo

Adobo is my family's all time favorite Filipino recipe. I suppose there are thousands of adobo recipes out there, as many as the number of houses in the Philippines... I mean who in the world (err, I mean Philippines) has not been captured by the simplicity yet satisfying taste of adobo? I probably have 10 variety of adobo recipes and I'm gonna share one today :)

Sweet Honey Pork Adobo
Ingredients:
1. half kilo of Pork
2. Soy Sauce
3. Vinegar
4. Pepper to taste
5. 2 tbsp of Honey (I use pure wild honey from Lake Sebu or Palawan honey)
6. I head garlic, minced
7. 1 cup of water
8. cooking oil
9. ginger
Procedure:
1. Saute garlic into oil
2. Add Pork and stir until the outer part looks cook
3. Add soy sauce, vinegar, pepper, ginger, honey and water, let it boil until the pork is nicely done

Here's this very easy to do recipe for every chicken lovers out there. It's fast, easy, delicious and best of all budget friendly! All you need to have are chicken (cut into strips) and a breading mix (I used crispy fry breading mix for this recipe). Partner it with your fave ketchup or gravy and you can munch these guys during meals or even merienda. :)

My family is lucky to be blessed with a spacious garden. Come night time, we would merely hang out there with our coffees and snacks and basically  chitchatting til we feel like sleeping. Sometimes I would buy packs of marshmallows at the grocery store and some graham crackers for our "garden camping" kuno escapade, lol!

Ber months has arrived and we can almost feel the cool breeze. And probably one of the exciting and budget friendly things to do during cold boring nights is to put up a campfire, roast some mallows and place it in between graham crackers and you've made yourself a simplified smores! Gather everyone around for some quality family bonding moments :)
